A goose egg is a large egg with a dense shell, a large yolk, and a richer flavor than a chicken egg. One egg can weigh about 140–250 g, so in recipes it often replaces several chicken eggs at once. In omelets it is simpler: the mixture can be loosened with a spoonful of water or cream, or balanced with more herbs and vegetables.

How to choose

The shell should be whole, without cracks, stickiness, or unpleasant smell. Very dirty eggs are harder to handle safely, so it is better to choose neatly collected ones. At home, the egg is washed right before use, not in advance: extra moisture on the shell worsens storage.

If possible, check the collection date. Freshness matters more than size. Goose eggs are not the best choice for dishes that are only lightly heated; it is more reasonable to cook them fully, especially for children, pregnant people, and anyone with reduced tolerance for food safety risks.

How to store it

Goose eggs are kept in the refrigerator, away from foods with strong odors. It is better to store them blunt end up and not wash them until cooking. If an egg is cracked, it is not saved for later: use it immediately after full heat treatment or discard it.

Because of their large mass, they cool and heat more slowly than chicken eggs. After boiling, they should not be kept at room temperature for long. Prepared dishes with goose egg are stored in the refrigerator and eaten soon.

What can replace it?

In most recipes, a goose egg is replaced with chicken eggs by weight: roughly two or three chicken eggs for one goose egg, but the exact ratio depends on size. For a fattier texture, an extra yolk can be added. In omelets and casseroles, duck eggs can also work if a similarly rich flavor is desired.
