Thoroughly rinse the cucumbers (1 kg) and soak them in water for 2 hours.
Slice the cucumbers into rings.
In a separate bowl, pour warm water (0.25 cup) and dissolve salt (1 tablespoon, leveled) and erythritol (60 g) in it.
Then add vegetable oil (0.25 cup), ground black pepper (0.5 tablespoon), and minced garlic (0.5 tablespoon), as well as apple cider vinegar (4 tablespoons).
Pour the resulting marinade over the sliced cucumbers.
Leave them for 2 hours, stirring occasionally every half hour to ensure the cucumbers are evenly soaked.
During the preparation process, the cucumbers will release juice, which will add a rich flavor to the dish.
