Gobies are small bottom-dwelling fish of the Gobiidae family, common in the Black Sea, the Azov Sea, the Mediterranean, and many coastal zones. In the cooking of southern Ukraine, Odessa, and other seaside regions, they are fried whole, dried, cured, stewed in tomato, added to fish soup, and served as a simple seasonal fish.

Gobies have firm white flesh with a distinct fish taste. The fish is small, so it is rarely filleted: more often it is cleaned, gutted, and cooked whole or almost whole. It is important not to confuse the product with calves: here the word refers to goby fish, not young cattle.

If gobies are fried without flour, two details matter: a dry surface and a hot enough pan. It is better to salt the fish shortly before cooking, dry it well, and not move it for the first minutes. Then the skin sets and the flesh stays firm.

For a softer dish, gobies can be stewed under a lid with tomatoes, garlic, and oil. Tomato acidity helps make small bones a little softer, but it does not remove them completely. So this fish is still eaten carefully.

How to choose and store them

Fresh gobies should smell of the sea or clean fish, without ammonia, sour, or musty notes. Eyes should be clear when possible, gills without gray slime, and the body firm. Small fish spoils quickly, so it is better bought on the day of cooking.

If the fish is sold already cleaned, check not only the smell but also the surface: it should not be sticky, gray, or watery. Too much thawed liquid in the tray often points to poor storage or repeated thawing.

Cleaned fish is kept briefly in the refrigerator, in a closed container on a cold shelf. For longer storage, gobies are frozen in portions. Cured fish is stored according to the producer’s instructions, protected from moisture and heat; if rancid fat smell or mold appears, it should not be used.

What can replace them?

By culinary role, gobies can be replaced with small sea fish: red mullet, horse mackerel, anchovies, smelt, capelin, or sardines. For fish soup, any small fish with a clear taste works; for frying, choose a firm small fish that is easy to cook whole. The replacement should be fish, not meat: veal will not copy either the taste or the structure of gobies.
