Ganache is not simply melted chocolate mixed with cream. It is an emulsion of a fat phase and a water phase. Chocolate contributes cocoa butter and dry solids, while cream contributes water, milk fat, and proteins. Careful mixing brings these parts together into a smooth, plastic mass. A filling that remains runny after chilling usually contains too much cream or purée for the chosen chocolate, or simply has not stabilized yet. Check the cocoa-butter percentage and do not transfer a white-chocolate formula directly to dark chocolate. For fruit fillings, also consider how watery the particular purée is.

After freezing, thaw the filling slowly in the refrigerator. Repeated freeze–thaw cycles damage the emulsion and texture, especially in fruit and cheese fillings. Before piping, fold the mixture with a spatula, but do not whip unnecessary air into it.
