Wash the lemons (400 g) well. If the skin is treated, soak the fruits in water with baking soda for 10 minutes, then rinse and dry.
Remove only the yellow part of the zest, avoiding the bitter white layer. Spread the zest in a thin layer on parchment paper.
Dry the zest in the oven at 80-100 °C for 1-2 hours, until it becomes brittle. Allow to cool completely and grind in a coffee grinder into a powder.
