Cut the melon flesh (356 g) into large chunks, then blend it until smooth.
Combine the water (85 g), allulose (43 g), lime juice (14 g), and ice-cream stabilizer (2.1 g) in a saucepan. Add the melon purée and blend until smooth.
Stir the base constantly while heating it to about 85 °C, then remove it from the heat.
Transfer the base to a container, cover it with cling film touching the surface, and refrigerate for 10–12 hours to stabilize.
Freeze the base in an ice-cream maker for 40–60 minutes, until smooth with fine ice crystals. Serve promptly.
