Chill pork with about 30% fat and grind through a 6-8 mm plate.

Mix nitrite salt, table salt, phosphate and cervelat spices. Add to the mince and mix until sticky.

Stuff casing. Warm and rest in a cold oven set to 30-35 °C with steam for 30-50 minutes.

Dry at 60 °C with convection, then roast at 80 °C to 58-62 °C inside.

Finish with steam at 80 °C to 69-72 °C inside. Cool under running water and refrigerate overnight.
