Grind the pepper mix (10 g) in a spice mill.
Mash the softened butter (300 g) with a silicone spatula.
Add lemon juice (20 g) and mix. Fold in the sea salt (6 g) and ground pepper; mix for about 3 minutes.
Shape the butter into a log, wrap it in cling film, and refrigerate for 2–3 hours until firm. Keep refrigerated.
