Although it seems difficult, leveling cakes is actually a technical skill that improves with practice. But even if you rarely engage in this process, knowing the key points will help you achieve a flawless result.

Here are some tips to help you level cakes quickly and beautifully.

The cake must be cold

Before leveling, make sure your cake is well chilled in the refrigerator, or better yet – in the freezer.

Ideally, chill it in the refrigerator for 2-3 hours or even freeze it for 30-60 minutes.

A cold cake is less prone to crumbling, which is especially important when applying frosting. Additionally, it’s easier to work with a chilled cake as the frosting doesn’t “melt.”

Tools for leveling

Having the right tools is important for leveling.

Turntable. This makes the frosting process easier, allowing you to rotate the cake and apply the coating evenly.

Metal spatula. It’s best to use a spatula with straight edges and a long blade for applying and leveling frosting.

Hold the spatula at a 90-degree angle to the cake and perpendicular to the table surface. This will help make the coating as even as possible.

Scraper (steel or plastic). Ideal for creating smooth side surfaces.

Applying the crumb coat

Don’t forget to trim any unevenness and the dome of the cake using a knife or a special leveler for cake layers. Only after this do we place the cake in the refrigerator to chill. Then we begin working with the already chilled cake.

The crumb coat is a thin first layer of frosting that traps crumbs and prepares a base for the final coating.

Use a spatula or a knife to spread a small layer of frosting on the top and sides of the cake. Don’t strive for perfection – the main goal is to prevent crumbs from getting into the main layer.

After that, remove the excess frosting with the scraper.

After applying, place the cake in the refrigerator for at least 20-30 minutes to let this layer set.

Final coating

Top of the cake. Take some frosting on the spatula and spread it evenly across the entire surface.

After this, level the top. Keep the spatula horizontal and slowly move it from the center to the edges, removing the excess frosting.

The key is not to apply too much pressure.

Sides of the cake. Use a piping bag to pipe the frosting in stripes, starting from the bottom and moving up.

This will ensure even application and help avoid excess.

If there are gaps or unevenness on the cake, fill them with frosting from the bag rather than from the spatula. This will make the coating neater.

Work the spatula from the bottom to the top, leveling the coating.

Keep the scraper strictly perpendicular to the table and the cake. Rotate the turntable with one hand while smoothly guiding the scraper with the other, removing excess frosting.

Removing excess frosting. After applying the layer of frosting, remove the excess using the scraper.

Move slowly, rotating the turntable to only remove the excess and not damage the main coating.

Final touches

Smoothing corners. The corners are the most challenging part. To level them, move the spatula or knife along the tangent, gently “pulling” the frosting from the sides to the top.

Remove excess. Take off any remaining frosting from the sides and top, using the scraper or spatula again.

If there are uneven spots, add some frosting to the gaps and repeat the leveling.

Dip the spatula in hot water to warm it up. After that, wipe it dry and use it for final smoothing – this will give the frosting a perfect smoothness.

Duration of leveling

Frosting, especially buttercream, becomes softer at room temperature, complicating the leveling process.

If you work for more than 20 minutes, it is recommended to:

• put the cake in the refrigerator for stabilization.
• put the frosting in a cool place so it doesn’t become too liquid.

This is especially important in warm weather or when using light frosting, which loses texture faster.

When baking, even small deviations in the size of the pan can affect the result: the sponge may not bake through, the cake may dry out, and there may not be enough cream.

But if your pan differs from the one specified in the recipe, don’t worry! There is a simple way to recalculate the ingredients for the required pan size. Let’s figure out how to do this.

Why it’s important to consider the diameter of the pan

Each pan has its own volume, which determines how high the dough will rise and how quickly it will bake.

If you use a pan with a larger diameter, the dough will be thinner, and the baking time will be shorter.

If the pan is smaller, the dough will be higher, and the baking may not bake through.

Conversion ratio

The conversion ratio helps adapt the amount of ingredients from the recipe to a pan of a different size. It doesn’t matter whether it’s a round, square, or rectangular pan. The formula is the same for any shape.

The formula itself is simple: the diameter of our pan squared divided by the diameter of the recipe pan squared.

For example, if you want to bake a sponge in a pan with a diameter of 26 cm, but the recipe specifies ingredients for a pan with a diameter of 23 cm.

In this case, the conversion ratio will be:
(26 * 26) / (23 * 23) = 676 / 529 = 1.27

Let’s also consider the opposite example. Suppose the recipe is designed for a pan with a diameter of 20 cm, but we only have a pan with a diameter of 16 cm.

Let’s calculate the conversion ratio:
(16 * 16) / (20 * 20) = 256 / 400 = 0.64

What to do next

We have learned the conversion ratio. Now we just need to multiply the quantity of all ingredients from the recipe by this ratio.

For example, if the recipe calls for 200 g of erythritol and our ratio is 1.27, then we will need:
200 * 1.27 = 254 g of erythritol.

If the quantity of the ingredient is specified in pieces, we also use the conversion ratio. But in this case, we round the fractional part up (if it is greater than or equal to 0.5) or down (if it is less than 0.5).

Example for 5 eggs:
5 * 1.27 = 6.35 = 6 eggs

In the recipes on the O-KETO.COM website, for which the diameter of the pan is specified, there is a field for adjusting the recipe for a pan of a different diameter. So, it is enough to just enter the size of your pan, and the quantity of ingredients will be adjusted automatically.

In the classic recipe for whipping egg whites, a large amount of sugar is used. This allows for an increase in volume and the creation of a smooth, fluffy, and elastic mass.

However, if you simply replace sugar with a sugar substitute, the results may be disappointing. The volume and texture of most universal substitutes (such as Prebiosvit, FitParad, or Novasvit) differ from sugar. The only good alternative to sugar in this regard is erythritol. It has properties similar to sugar.

If you don’t have erythritol, you can add lemon juice to the egg whites, start whipping, and gradually add the sugar substitute during the whipping process.

Whipping Technique

To achieve the best results, it is important to follow a few recommendations:

• use medium speed on the mixer;
• for 100 g of egg whites, the whipping time is about 8-10 minutes at medium power in a small bowl;
• the larger the bowl, the longer you need to whip.

It is important not to overdo it: whipping for too long will result in a mass that is too dense, making it difficult to incorporate evenly into the batter.

On the other hand, insufficiently whipped egg whites can make the batter too dense and heavy.

Checking Readiness

Perfectly whipped egg whites have a smooth, glossy texture and hold their shape well, but should not be too stiff.

To ensure proper whipping, try to turn the container with the whipped egg whites upside down. If they do not spill out, you have achieved the desired consistency.
