Green tea is made from leaves of Camellia sinensis that are heated soon after harvest and are not brought to full fermentation. This is why the infusion is lighter, more grassy and usually softer in astringency than black tea. Flavor depends on variety and processing: it can be fresh, nutty, marine, floral, slightly sweet or noticeably bitter if brewed with water that is too hot.

Green tea contains almost no calories or carbohydrates when served without sugar, honey, syrups and sweet milk. It contains caffeine, catechins, polyphenols, the amino acid L-theanine and small amounts of manganese, potassium and fluoride. But a cup of tea is primarily a drink, not a vitamin supplement. Matcha is also green tea, but because it is powdered, its flavor and intensity are stronger.

During intermittent fasting, the strict version is green tea without caloric additions. If the infusion is harsh and bitter, the cause is usually overheating, too much leaf or overbrewing rather than the tea itself.

Good green tea can be brewed several times. The first infusion often gives aroma and freshness, while later ones bring softness and depth. For cold brew, cover the leaves with cold water and keep them in the refrigerator for several hours. This method makes the flavor gentler and reduces the risk of bitterness.

What to Pair With It

Green tea pairs well with fish, seafood, eggs, avocado, soft cheeses, nuts, salads, cucumber, herbs and unsweetened cream-based desserts. With fatty food it refreshes the palate, while with very sweet dishes it can seem bitter. In low-carb cooking it is especially convenient beside simple savory meals.

Jasmine green tea suits mild sugar-free desserts, sencha pairs well with fish and vegetables, and genmaicha with roasted rice is aromatic, though for strict tracking it is best not to treat the grains as food. Matcha works in drinks and creams, but the powder is easy to overuse by flavor.

How to Choose and Store

Good green tea smells fresh: grassy, floral, nutty, marine or lightly sweet, not damp, dusty or rancid. In flavored blends, check the ingredients. Candied fruit, sugar pieces, sweet berries and caramel additions can change the carbohydrate profile even when tea remains the base.

Store green tea in a dry, tightly closed package away from light, the stove, spices and coffee. It loses freshness faster than many black teas, so buying a large reserve makes little sense if it is used rarely. Matcha is especially sensitive to air, moisture and heat.

Limits

Green tea contains caffeine, so late drinking can disturb sleep. In sensitive people, a strong infusion on an empty stomach can cause nausea, shakiness or reflux. If iron status is a concern, avoid washing down iron-rich meals with tea every time, because tannins can reduce absorption of non-heme iron from plant foods.

Green tea can be replaced with white tea, oolong, weak black tea, rooibos, mint, chamomile or cold water with lemon. If alertness is the goal, other true teas and coffee are closer substitutes; for an evening drink, a caffeine-free option is usually better.
