Trim the Brussels sprouts (300 g) and cut them in half. Toss them with olive oil (5 g), nutmeg (1 g), and salt (to taste) so the seasoning coats the vegetables evenly.

Spread the sprouts in the air fryer basket in one layer and cook at 180 C for 15 minutes. Shake or stir them halfway through so the cut sides brown while the centers stay tender.

Right after cooking, sprinkle the sprouts with parmesan (20 g) and pumpkin seeds (20 g). Serve them hot while the cheese is still melting slightly on the warm vegetables.
