Heat water (500 g) to 95°C. Fold a Chemex paper filter, place it in the brewer, rinse it with hot water, and discard the water.
Grind coffee (30 g) coarsely, add it to the filter, and level the bed.
First pour in enough hot water to wet all the coffee and wait about 30 seconds. Then pour in the remaining water gradually in circular motions, keeping the stream on the coffee bed.
Wait until the brew finishes, remove the filter, and gently swirl the coffee before serving.
