Sausage in a Spice Coating
A source of protein and fats with a brighter spicy profile from paprika, coriander, and black pepper. The gelatin coating helps keep the surface juicy, while the flavor becomes rich, spicy, and slightly piquant.
First prepare a ready sausage loaf or cervelat (800 g): remove the casing from the fully chilled product and dry the surface thoroughly. If there is a thin fat film on the loaf, wipe it with a paper towel, otherwise the coating will go on unevenly and slide off.
Cover the gelatin (30 g) with water (120 g) for 20-30 minutes, then briefly warm it until liquid, without bringing it to a boil. Mix paprika (20 g), coriander (10 g), and black pepper (3 g) in a wide dish.
Quickly dip the loaf into the gelatin or coat it well with a brush, then immediately roll it in the spice mixture and press the coating gently with your hands. Transfer the loaf to a rack and refrigerate it for 2-3 hours, so the gelatin film sets.
After stabilization, the sausage can be sliced thinly: the coating will no longer crumble as actively, and the flavor will become more even and brighter.
