Wash the pork knuckle (1500 g) and dry it well with a paper towel.

Peel the garlic (30 g) and slice it. Make small incisions in the knuckle and insert the garlic into them.

Rub the knuckle with salt, black pepper, and spices to taste. You can add dried celery, ginger, horseradish, or a bit of lemon zest. Place it in the refrigerator for at least 2 hours or overnight.

Transfer the knuckle to a roasting bag, seal the edges, and make several holes with a toothpick for steam to escape.

Cook in an air fryer at 90 °C for about 9 hours. Then cut open the bag, increase the temperature to 250 °C, and cook for another 20-25 minutes to form a crust.

Let the knuckle rest for a while before slicing.
