Care este cea mai bună sursă de fosfor?
Cel mai calitativ sursă de fosfor este lecitina. Lecitina este o formă de fosfor legat organic, maximal absorbit de organism. Două-trei ouă pe zi sunt suficiente pentru a obține norma zilnică de lecitina (dar nu de fosfor). De asemenea, lecitina se găsește în semințele de floarea-soarelui și în soia.
Lecitina — este într-adevăr o sursă bună de fosfolipide, care conțin fosfor.
Ouăle (în special gălbenușul) sunt bogate în lecitină: aproximativ 1,3 g de lecitină într-un gălbenuș. Consumând 2–3 ouă pe zi, o persoană obține 2,5–4 g de lecitină, ceea ce asigură o parte semnificativă din necesarul de fosfolipide.
Totuși, în general, 1 ou (~60 g) conține aproximativ 85–100 mg de fosfor. Având în vedere norma pentru un adult de aproximativ 700–1000 mg de fosfor pe zi — 2–3 ouă oferă aproximativ 200–300 mg de fosfor total. Adică, 25–30% din norma zilnică.
