Dark chocolate cream with Parmesan is a dense cheese ganache for small desserts, layers or serving in shot glasses.

Heat unsweetened coconut milk (60 g) with 85% chocolate (30 g) until the chocolate melts completely. Do not boil for long; the mixture only needs to become smooth.

Add finely grated Parmesan (25 g) and blend for 2-3 minutes. Transfer the cream to a container and refrigerate for 12 hours to set.
