Wash the spinach (120 g) and dry it well. Heat olive oil (5 g) in a 20-22 cm pan, add the spinach and cook for 1-2 minutes until the leaves wilt and the excess moisture has almost evaporated.

Beat the eggs (100 g) with table salt (1 g) and black pepper (0.5 g) until smooth. Pour the mixture over the spinach, reduce the heat to low, and cook for 4-6 minutes covered. The omelet is ready when the edges are set and the center is moist but no longer runny. Fold the omelet in half and serve immediately.
