Grind walnuts (50 g) in a coffee grinder or blender into a fine meal. Mix 30% sour cream (60 g), egg (50 g), erythritol (35 g), and vanilla (1 g).
Melt coconut oil (35 g), stir it into the sour cream mixture, then add the ground walnuts and cocoa powder (20 g). Mix into a thick, even batter.
Divide the batter between small silicone molds and bake at 180°C for about 20 minutes. The brownies should set around the edges but stay slightly moist inside; let them cool for 10 minutes before serving.
