Finely dice the onion (150 g).
Butter (215 g): set aside 15 g for frying and leave the remaining 200 g to soften. Sauté the onion in the reserved butter for about 10 minutes until golden.
Transfer the onion to a plate and cool it to room temperature.
Mash the remaining softened butter with a silicone spatula. Add the onion powder (20 g), sea salt (2 g), and pepper mix (1 g), then fold in the cooled onion and mix for about 3 minutes.
Shape into a log, wrap in cling film, and refrigerate for 2–3 hours until firm. Keep refrigerated.
