Sugar-Free Limoncello
Lemon juice provides a small amount of vitamin C and fresh acidity, while allulose keeps the drink sweet without sucrose. The zest adds a bright citrus aroma, and after infusion and straining the drink is clear, aromatic, and best served chilled.
Wash the lemon (1000 g) thoroughly, remove a thin layer of zest without the white pith, and squeeze out the juice. Remove the seeds, then place the juice and zest in a large glass jar.
Heat water (1000 g) with allulose (250 g) until the sweetener dissolves completely, then cool the syrup fully.
Pour vodka (1000 g) and the cooled syrup into the jar. Close the jar and leave the drink in a dark place for 4–5 days, gently shaking it once a day.
Strain the limoncello through a fine sieve or cheesecloth, transfer it to a bottle, and store it in the refrigerator. Serve chilled in small portions; this drink is for adults only.
