Place the eggs (150 g) in a small saucepan and cover them with cold water, no more than 1 cm above the eggs. Bring the water to a boil.
Once it boils, reduce the heat by one level and cook for 3 minutes for soft-boiled eggs, 5 minutes for jammy yolks, or 7 minutes for hard-boiled eggs.
Immediately place the eggs under cold running water for 1 minute, then chill them in a bowl of cold water for another 3 minutes. Peel and serve, or refrigerate.
