Clean the pork (1000 g) from membranes and excess fat.

Boil water for the marinade, remove from heat and add sea salt (60 g), allulose (12 g), bay leaves (5 pcs.), allspice (3 g), black pepper (3 g), fennel (3 g), and crushed garlic (50 g). Cool the marinade to room temperature.

Place the meat in the marinade and refrigerate for 3-4 days, turning occasionally.

Remove the meat, dry it, and roll it tightly into a log. Secure it with film or twine and pack it in a vacuum bag.

Cook using the sous-vide method at 70 °C for 6 hours. Then transfer the roll to a mold, press down, and refrigerate overnight.

Unroll the ham and slice it thinly. Serve with keto bread, horseradish, or vegetables.
