Crush thyme (4 g), bay leaf (2 pcs.), pink pepper (3 g), and salt.
Rub the rabbit legs or rabbit meat (600 g) with the spice mixture. Pack in a vacuum bag with butter (20 g).
Cook using the sous-vide method at 64 °C for 8-10 hours.
Remove the rabbit, pat dry. Quickly sear in olive oil (15 g) on all sides, being careful: the meat will be very tender.
Serve with sour cream sauce or vegetable keto garnish.
