Remove the leaves from the sprigs of thyme (a few sprigs) and rosemary (a few sprigs). Peel the garlic (2 cloves).
Combine in a blender olive oil (3 tbsp), thyme and rosemary leaves, garlic, lemon juice (1 piece), and lemon zest (1 piece). Add salt (to taste) and black pepper (to taste). Blend until you get a uniform aromatic marinade.
Lemon zest enhances the aroma of citrus oils and makes the chicken’s flavor brighter and fresher.
Cut the chicken into portion-sized pieces and thoroughly coat with the marinade. Let it marinate in the refrigerator for 30–60 minutes.
Grill for 12–18 minutes, turning regularly. Alternatively, bake in the oven at 200 °C for 25–35 minutes until golden brown and the internal temperature reaches 75 °C.
