Wash and clean the pollock (1 piece). Cut into pieces.

To prevent parasites, always freeze the fish or use pre-frozen fish before salting.

Sprinkle with coarse salt (1 tbsp), add black pepper (2 pinches), minced garlic (1 clove), lemon juice (1 tsp), and bay leaf (1 piece).

Place the fish in a jar and put it in the refrigerator for 3 days. Periodically drain the liquid. If desired, add more salt.
