Grind partially frozen pork. Add salts, phosphate, allulose, spices, garlic and ice water.

Mix until a pale protein film appears. Soak fibrous casing and stuff the loaf.

Refrigerate for 6-12 hours, then warm to 14-16 °C inside.

Dry at 60 °C to 30 °C inside, roast at 85-90 °C to 55-60 °C, then cook with steam at 80-85 °C to 68-70 °C.

Cool in cold water for 10-15 minutes and refrigerate for 10-12 hours.
