Rinse chicken breast (800 g) and dry it well with a towel. Mix salt (10 g), black pepper (2 g), khmeli-suneli (4 g), dried garlic (3 g), and paprika (2 g).

Rub the chicken with the spice mix on all sides, cover, and refrigerate for 12-24 hours. Before baking, let it stand for 20-30 minutes so it is not ice-cold.

Wrap the breast in parchment and bake at 130 °C for about 60 minutes or until the thickest part reaches 82 °C. Rest for 10 minutes, then slice.
