Grate the suluguni (250 g) or cut it into thin slices. If the cheese is very salty, rinse it with cold water and dry it.

Melt the butter (40 g) in a pan over low heat. Place the cheese in an even layer and heat for 2-3 minutes until it starts to melt and slightly bubble at the edges.

Crack the eggs (4 pcs) directly onto the cheese. Add salt (to taste) and black pepper (to taste). Cover the pan with a lid and cook for 4-6 minutes until the egg whites are set and the yolk remains soft.

For firmer yolks, keep the dish covered for another 1-2 minutes. Do not overheat the cheese: it should melt but not become dry.

Serve immediately while the cheese is hot and stretchy.
