Eastern menemen is soft, juicy and balanced between tomato acidity, eggs and cheese. Cook it briefly so the eggs stay tender.

Peel and finely chop tomatoes (300 g). Chop onion (80 g), hot chili pepper (20 g) and parsley (10 g) separately.

Heat olive oil (15 g) in a skillet. Fry the onion and pepper until soft, add the tomatoes and simmer until the sauce thickens slightly.

Stir in eggs (150 g), half of the feta (50 g), sea salt (2 g) and black pepper (1 g). Cook for 2-5 minutes, stirring constantly, then top with the remaining feta and parsley.
