Mix the olive oil (30 g) with table salt (4 g), black pepper (1 g), and Provencal herbs (2 g). Brush the turkey fillet (450 g) with this mixture on both sides, then sear it quickly over high heat until lightly golden.

Transfer the turkey to a baking dish and cover it completely with the tomato sauce (180 g). Combine the mozzarella (80 g) with the Parmesan (40 g) and spread the cheese generously over the sauce.

Bake at 180 °C for about 15-20 minutes, until the turkey is fully cooked and the cheese topping is browned. Serve right away while the cheese is still melty.
