Turkish Coffee in a Cezve
Coffee provides caffeine, polyphenolic compounds, and a small amount of magnesium. An extra-fine grind and gentle heating create a dense drink with a pronounced aroma and rich body. Prepare it for only a few minutes and never let it boil vigorously.

Heat water (100 g) to 70–80°C and grind coffee (10 g) extra-fine. Pour the water into a cezve and add the ground coffee.
Place the cezve over medium to high heat and heat for about 2 minutes without bringing the coffee to a vigorous boil.
When the foam rises, reduce the heat and cook for about 1 minute more. Remove the cezve from the heat and pour the coffee into a cup immediately.
