Salmon Skin Skillet Snack
Salmon skin provides protein and fat and turns into a thin, golden snack without a coating. Parchment and a weight hold each piece against the dry skillet so it crisps evenly. Season lightly after cooking and serve right away for the best crunch.
Pat salmon skin (150 g) dry with paper towels and cut it into pieces sized for serving. The flesh side faces down in the cold, dry skillet; parchment covers the pieces and a heavy saucepan presses them flat. This setup takes about 3 minutes.
Fry over low heat for about 30 minutes. Check the chips: the skin should be completely dry and crisp. If it is still moist or flexible, continue frying until it reaches that state.
Transfer the chips skin-side down to paper towels and lightly season with Salt (to taste). Serve immediately for the best crunch.
