Start by combining cottage cheese (400 g), sour cream (400 g), and vanilla (10 g) in a bowl. Use a blender to thoroughly mix the ingredients until you get a homogeneous mass. This will take just a few minutes.
Separately, bring berries (230 g) to a light boil with water (150 ml). Options include strawberries, blueberries, raspberries, blackberries, currants.
Once boiling, add agar-agar (2 tsp) and cook for 1 minute.
Remove from heat and add erythritol (70 g). Stir to dissolve the sweetener.
Combine both masses and whisk with a mixer. Then pour into a mold.
Once the mass has cooled, place in the refrigerator to set for several hours.
