Cut the remaining part of the heart and the second half of the chicken breast (125 g) into small cubes.
In a deep bowl, combine the minced meat, diced pieces of heart and chicken, onion (80 g), garlic (10 g), gelatin (10 g), salt (20 g), and black pepper (2 g).
Chop the bell pepper (45 g) into small pieces. If you want a brighter flavor, add some fresh chili to taste. Pour in water (50 g) and mix the entire mixture well.
Place the meat mixture in the refrigerator for at least 2 hours, preferably overnight.
Line the bottom of the ham mold with parchment paper. Firmly pack the meat mixture, press it down well, place parchment on top again, then close the lid and secure it with springs.
Put the ham mold in a pot and pour in water almost to the level of its lid. Bring the water to 80°C and cook for 2 hours. In a slow cooker, cook on the stewing mode for about 1.5 hours, and in a pressure cooker on the slow cooking mode for about 2 hours.
Remove the ham mold, place it under cold water for 10 minutes, then put it in the refrigerator for 12 hours. After cooling, carefully remove the ham from the mold and slice it.
