Use thick Greek yogurt (200 g) for this sauce. If the yogurt is loose, drain it in cheesecloth for 20-30 minutes so excess whey runs off; the finished sauce should hold on a spoon.

Finely chop capers (20 g), garlic (5 g), and tarragon (6 g). Add them to the yogurt with lemon juice from lemon (25 g), table salt (2 g), and black pepper (0.5 g).

Stir until smooth and taste. For fatty fish, add a few more drops of lemon juice; if the sauce tastes too sharp, let it stand in the refrigerator for 10 minutes.
