Preheat the oven to 190 °C and grease a baking dish with olive oil (5 g). Quickly wilt spinach (450 g) in a pan with the remaining olive oil (15 g) for 1-2 minutes.

Place the spinach in the dish. Add mozzarella (150 g), crumbled feta (100 g), and green onion (50 g). Season with black pepper (1 g); skip salt because feta is already salty.

Whisk eggs (700 g) with 35% cream (80 g), pour over the cheese and greens, and mix with a fork. Bake for 40-45 minutes until golden and set in the center.
