Rub lamb (1.8 kg) with lemon juice (40 g), mustard oil (45 g), table salt (12 g), black pepper (2 g) and Herbs de Provence (8 g). Cover and refrigerate at least overnight.
Take the meat out 40-60 minutes before roasting. Add garlic (30 g), fresh rosemary (8 g) and onion (120 g), cut into large wedges.
Roast at 200 °C for about 1 hour 15 minutes, depending on the size of the piece and your preferred doneness. Let the meat rest for 10-15 minutes before slicing.
