Cauliflower tabbouleh is fresh, crumbly and works well as a cold side dish. Fine cauliflower crumbs absorb lemon and olive oil without becoming heavy.
Chop cauliflower (150 g) into fine couscous-like crumbs. Dice cucumbers (50 g) and bell pepper (50 g) finely.
Finely chop parsley (30 g), quarter cherry tomatoes (30 g), and grate or mince garlic (5 g).
