Dark chocolate with Camembert and blue cheese is dense, lightly salty and contrasting: cheese pieces add creamy softness against dark chocolate.
Brush the mold with a thin layer of melted cocoa butter (6 g) and chill. Melt 85% chocolate (100 g) over a water bath and heat to 45-50 °C, then cool to 34 °C.
Cut Camembert (30 g) and blue cheese (30 g) into small pieces. Fill the mold with part of the chocolate, add the cheese and cover with the remaining chocolate. Refrigerate for at least 30 minutes to set.
