Cut the mozzarella (300 g) into sticks about 1.5 cm wide. Place them on a board or plate lined with parchment paper and put them in the freezer for 30 minutes.

In a large bowl, whisk the egg (1 piece) with mayonnaise (30 g) and lightly salt.

In one plate, pour some almond flour (60 g). In another, mix the remaining almond flour, parmesan (40 g), onion powder (1 g), and garlic powder (1 g).

Take the cheese sticks out of the freezer. Coat each stick first in almond flour, then in the egg, and finally in the cheese mixture. Return the sticks to the parchment and put them back in the freezer for another 15-20 minutes before cooking.

Preheat the air fryer to 180 °C. Place the sticks in the basket so they do not touch each other, and bake for 5 minutes until golden brown.

Serve immediately while the cheese inside remains gooey.
