Sesame cookies
A source of healthy fats and protein, this cookie has a low glycemic index thanks to erythritol, making it ideal for maintaining blood sugar levels. The delicate nutty flavor of sesame and almond flour gives it a unique appeal.
Preheat the oven to 180 °C.
Beat the softened butter (40 g) with the sweetener (65 g) until creamy.
Add the egg (2/3–1 piece) and beat again until smooth.
Add almond flour (40 g) and baking powder (1/2 tsp). Stir in the toasted sesame seeds (100 g). Gently mix the dough with a spatula.
Place the dough on a baking sheet lined with parchment in portions of 1/2 teaspoon. Slightly flatten the mounds.
Bake for 10–13 minutes until the edges are golden.
Completely cool the cookies before serving.
