Cut the eggplant (250 g), courgettes (400 g), red and yellow bell pepper (600 g), and red onion (100 g) into large pieces. Mince the garlic (12 g) and strip the leaves from the fresh rosemary (4 g) and fresh thyme (4 g).
Mix the olive oil (45 g) with the garlic and herbs, season with table salt (to taste) and black pepper (to taste), then toss with the vegetables and leave for 10 minutes.
