Roasted Peppers in Garlic Marinade
Bell peppers provide vitamin C and keep this appetizer juicy without complicated sauces. Garlic, parsley, and wine vinegar build a brighter flavor that works especially well chilled. This vegetable side is particularly useful in summer or on a platter with meat dishes.

Peel the roasted bell peppers (750 g) and remove the seeds if that has not been done yet, then cut them into long strips. Finely chop the garlic (10 g) and slice the parsley (5 g).
Place the bell peppers (750 g) into a bowl or container, add the garlic (10 g), parsley (5 g), olive oil (30 g), wine vinegar (10 g), and salt (3 g). Toss gently so the marinade coats all the pepper strips.
Chill the appetizer for 30 minutes and serve it cold. The roasted peppers pair especially well with grilled meat, fish, and simple vegetable plates.
