Combine gelatin 220 bloom (1 g), sweetener (15 g), and salt (0.5 g) with room temperature water (13 g). Let it swell for 20–30 minutes.

Mix peanut butter (13 g) with cocoa butter (4 g). Heat until the butter is melted and stir until smooth.

Dissolve the gelatin completely (in short bursts in the microwave or in a water bath) and add it to the nut mixture. Stir.

Gradually add protein (10 g or to taste and necessity), mixing until smooth.

Shape into a bar, wrap in plastic wrap, and refrigerate for 8–14 hours to stabilize.

Store the bar in a closed container for no more than 72 hours.
