Butterfly the chicken breast (fillet) (1000 g) and pound it well. Remove the skin and bones from the boneless skinless chicken thigh (200 g) and dice the meat.
Cut the bell pepper (150 g) into strips and grate the carrot (100 g). Combine the thigh meat, bell pepper, carrot, table salt (to taste), meat spice blend (to taste), and gelatin (10 g).
Arrange the bacon (200 g) and spread the chicken fillet over it. Wrap the filling in nori sheets (10 g), place it on the fillet, and roll the roulade tightly.
Bake at 190°C for 60 minutes.
