Chocolate coconut cookies turn out dense, gently crumbly and stable after cooling. Cocoa gives a clear chocolate flavor, while coconut oil softens the texture.

Mix ground flaxseed (7 g) with water (90 g) and let it stand for 5 minutes until thick. In a separate bowl, combine coconut flour or fine coconut flakes (28 g), cocoa powder (25 g), erythritol (50 g), starch-free baking powder (2 g) and sea salt (1 g).

Add the flax mixture, melted coconut oil (30 g) and vanilla (2 g). Stir the dough and let it rest for 3 minutes so the coconut flour absorbs moisture.

Divide the dough into 12 portions, place on parchment and flatten lightly. Bake at 180 °C for 12-15 minutes, then cool the cookies on a rack for about 30 minutes.
