Mix almond flour (160 g), baking powder without starch (1.5 g), xanthan gum (2 g), stevia (to taste), and vanilla (to taste).
Whisk egg (50 g) with melted coconut oil (50 g), add the dry mixture, and mix. Refrigerate the dough for 30 minutes.
Roll the dough to about 0.7 cm thick and cut out the cookies.
Bake the cookies at 160 °C for 12–15 minutes until golden. Cool them completely.
