Dark chocolate truffles with blue cheese are dense, lightly salty and very rich. Add the blue cheese after melting the chocolate so the flavor stays bright.
Put 85% chocolate (50 g), 35% cream (15 g) and butter (10 g) into a bowl. Melt over a water bath until smooth.
Add blue cheese (20 g) and blend. Cover the mixture with plastic wrap in contact and refrigerate for at least 1 hour, preferably overnight.
Roll small truffles and keep them refrigerated until serving.
