Mix each mince with half of the cream, salts and spices until sticky, keeping it cold.

Layer one mince on film, spread the second mince over it and roll tightly.

Rest in the refrigerator, warm, then cook at 50 °C to 50 °C inside and finish at 80 °C to 70-72 °C.
