From-scratch chocolate with Camembert is made from cacao liquor and cocoa butter. Grind erythritol into powder first so the bar is not gritty.
Melt cacao liquor (70 g) and cocoa butter (35 g) over a water bath. Add powdered erythritol (40 g), warm the mixture to about 50 °C and stir well.
Cool the chocolate mixture to 34 °C. Pour a thin layer into a mold, add pieces of Camembert (30 g) and cover with the remaining chocolate. Refrigerate for at least 1-2 hours to set.
